Fiid Hack: Baked Sweet Potato with Vegan Cream Cheese

As an Irish company, we felt it was obligatory to tackle a classic baked potato recipe. Here's our take on the deeply comforting dish with our spin using sweet potato and vegan cream cheese. This is one is not to be missed. 

Serves 1

Ingredients:

Method:

  1. Preheat the oven to 180C.
  2. Scrub the sweet potato, pat dry and then rub with a little olive oil, a pinch of salt and pepper. Roast on a baking tray for about 40 minutes, or until cooked through (alternatively prick with a fork and cook in the microwave for 10 - 12 minutes).
  3. Cook the spinach in a pan with a drop of olive oil.
  4. Gently toast your pumpkin seeds over a low heat.
  5. Once finished, cut a cross in the top of your cooked potato and gently break it open with a fork, mashing a little of the inside as you go.
  6. Pour your heated fiid Sundried Tomato & Lentil Ragu over, add the other toppings and drizzle with your favourite vegan cream cheese.
  7. Dig in.
