Fiid Hack: Moroccan Butterbean and Carrot Ribbon Salad With Roasted Chickpeas

Having a repertoire of 'go to' recipes has always been something I've aspired to but haven't quite ever gotten around to: a bit of a pipe dream, something I'll do when I've settled down, have more free time, have a nicer kitchen, own more beautiful plates. I'm still not there but what I do have are a whole load of fun and creative ways to eat fiid like this Moroccan Butterbean and Carrot Ribbon Salad With Roasted Chickpeas, the kind of dish that when served to friends is sure to impress and make them think that you do in fact, have a repertoire of 'go to' recipes which is actually just as good to be honest. 

Serves 4

Ingredients 

1 x Fiid Hearty Moroccan Chickpea Tagine
2 x Carrots
1 x Tin Butterbeans 
6 x Tin Chickpeas 
1tbs Tomato Puree
2tbs Olive Oil 
1 x Garlic Clove 
1x Lemon (Zest & Juice)
2 tsp Smoked Paprika 

Rocket leaves, 2 handful
Black Pepper, Freshly Ground
Salt

 

Method 

  1. Preheat Oven at 180C
  2. Drain 1 can of Chickpeas and place on a baking tray, drizzle with 1tbs of olive oil and 1 tsp of Smoked Paprika. Toss until the Chickpeas are coated with the oil and Paprika and place in the oven for 35min, until golden brown and crispy
  3. Place a saucepan on medium heat and add the contents of your Fiid Hearty Moroccan Chickpea Tagine to a pan along with 1 tbs of Tomato Puree and 1 Garlic Clove. Bring to a simmer and remove from the heat
  4. Add 1 tin of Butterbeans and stir to combine
  5. Allow to cool and refrigerate until it is ready to serve
  6. Using a peeler, peel long thin ribbons from the carrots (Note from Shane: I actually find this quite meditative and soothing!)
  7. Take the Butterbeans out of the fridge, add the zest of one Lemon with the juice, add 1 tbsp of Olive Oil and toss to combine
  8. Add in your carrot ribbons and rocket leaves, toss lightly and sprinkle with your toasted Chickpeas, Smoked Paprika, Salt and Pepper to taste
