Moroccan Couscous Salad

Serves 2


  • 1 x fiid Hearty Moroccan Chickpea Tagine
  • 400ml Vegetable Stock
  • 200g Couscous
  • 1 x Red Onion, sliced
  • 1 x Garlic Clove, crushed
  • 2 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Cinnamon
  • 1 tbsp Almonds, toasted
  • 1 tbsp Coriander, chopped
  • 1 tbsp Mint, chopped
  • 1 tbsp Dried Apricots, chopped
  • Salt & Pepper


  1. Place a frying pan on medium - low heat and add 1 tbsp of oil. Once warm, add your sliced onion and a pinch of salt.
  2. Allow the onions to sweat down until they are translucent and starting to caramelise.
  3. Add your fiid Hearty Moroccan Chickpea Tagine along with 1 tsp of cumin and 1 tsp of cinnamon and 1 crushed garlic clove. Allow to reduce down into a thick paste.
  4. Place your dried couscous into a bowl, add a pinch of salt and pepper and drizzle with 1 tbsp of olive oil.
  5. Pour over your vegetable stock and empty the onions and paste from your frying pan on top, no need to mix it yet.
  6. Cover with a lid or cling film and allow to sit for 20 minutes until the couscous has absorbed all the stock.
  7. Add in your chopped herbs and dried apricots and stir everything to combine, serve and sprinkle with your toasted almonds.
