Serves 2
Ingredients:
- 1 x fiid Hearty Moroccan Chickpea Tagine
- 400ml Vegetable Stock
- 200g Couscous
- 1 x Red Onion, sliced
- 1 x Garlic Clove, crushed
- 2 tbsp Olive Oil
- 1 tsp Cumin
- 1 tsp Cinnamon
- 1 tbsp Almonds, toasted
- 1 tbsp Coriander, chopped
- 1 tbsp Mint, chopped
- 1 tbsp Dried Apricots, chopped
- Salt & Pepper
Method:
- Place a frying pan on medium - low heat and add 1 tbsp of oil. Once warm, add your sliced onion and a pinch of salt.
- Allow the onions to sweat down until they are translucent and starting to caramelise.
- Add your fiid Hearty Moroccan Chickpea Tagine along with 1 tsp of cumin and 1 tsp of cinnamon and 1 crushed garlic clove. Allow to reduce down into a thick paste.
- Place your dried couscous into a bowl, add a pinch of salt and pepper and drizzle with 1 tbsp of olive oil.
- Pour over your vegetable stock and empty the onions and paste from your frying pan on top, no need to mix it yet.
- Cover with a lid or cling film and allow to sit for 20 minutes until the couscous has absorbed all the stock.
- Add in your chopped herbs and dried apricots and stir everything to combine, serve and sprinkle with your toasted almonds.
