Finely dice your red onion and peel and chop your sweet potato into small cubes. Add 1 tbsp olive oil to a small saucepan and place on a medium heat, add in your onions and sweat down for a few minutes.
Add the sweet potato cubes and your fiid Hearty Moroccan Chickpea Tagine, simmer for 10 to 15 minutes until the sweet potato are cooked through and the liquid has reduced. Remove from the heat and allow to cool.
Chop your macadamia nuts (can substitute for any type of nut you like) add them to a bowl along with the breadcrumbs add your cooled fiid and sweet potato from the pan. Mix everything to combine.
Lightly oil or line the base of a loaf tin with baking paper. pour the mixture into the tin. Press down with a spoon firmly to compact. Cover with foil and bake for 25 minutes.
Remove the foil and bake for a further 10 minutes until it is lightly browned.
Remove the tin carefully from the oven and cool for 5 minutes before loosening the edges of the loaf with a table knife and turning out onto a plate.
Cut into thick slices and serve along with all your favourite Christmas trimming, Merry Christmas!
