Ingredients
- 1 fiid Hearty Chickpea Tagine
- 1/2 red onion
- 4tbsp hummus
- Juice of ½ lemon
- Couscous
- 8 cherry tomatoes
- 4 olives
- ½ cucumber
- 1 tbsp olive oil
- Sea salt and black pepper
- Coriander leaves, to garnish
Method
- To prepare the couscous, boil the kettle and follow the instructions on the back of the pack. Cover and allow to sit.
- Once ready add some olive oil, lemon juice and salt and pepper, mix to combine.
- Cook your Hearty Chickpea Tagine by following the back of pack instructions, and prepare your toppings;
- Thinly slice the red onions
- Cut the cherry tomatoes in half
- Remove the stone from the olives and roughly chop.
- Dice the cucumber into medium pieces. - Divide everything evenly between two bowls, top with 2tbsp of hummus on each bowl, season and sprinkle with coriander. Season with salt and pepper and enjoy.
