Ingredients
- 1 fiid Hearty Chickpea Tagine
- 1 head cauliflower
- 1 tbsp olive oil, optional
- Salt and freshly ground black pepper
- 4 tbsps pomegranate seeds, to garnish
- Some freshly chopped parsley leaves, to garnish
- 25g roasted hazelnuts, chopped, to garnish
Method
- Remove the leaves and most of the stalk from the cauliflower and then place into a food processor. Pulse until the cauliflower resembles rice.
Once you have your cauliflower rice, it’s easy to cook, or if you prefer, to enjoy it raw. - If cooking, simply add 1 tbsp olive oil to a large sauce and cook for 1 minute, stirring then cover with a lid so the cauliflower steams becomes more tender. Cook for a total of 5-8 minutes, then season with salt and pepper.
- Warm your Hearty Chickpea Tagine according to back of pack instructions.
- Spoon the cauliflower rice into bowls then add your Hearty Chickpea Tagine. Garnish with the pomegranate seeds, chopped parsley and roasted nuts.
