Serves 4-6
Ingredients:
- 1 x fiid Italian Sundried Tomato Lentil Ragu
- 250g Pasta
- 4 x large Tomatoes
- 6 x Cherry Tomatoes
- 1 tbsp Tomato Puree
- 1 x Garlic Clove, crushed
- 1tbsp Balsamic Vinegar
- 1tbsp Olive Oil
- 1 handful of fresh Basil, chopped
- 1 handful of Rocket Leaves, chopped
- Salt & Pepper
Method
- Boil water to cook the pasta. We used Rigatoni but you can use whatever is in the pantry. (*Shane's tip: Try using a nice large pasta shape that has somewhere to hide the sauce inside 😍)
- Once the water is boiled, cook the pasta according the instructions.
- In a separate pan, add your fiid Italian Sundried Tomato & Lentil
Ragu along with the tomato puree, crushed garlic clove. Bring to a simmer before removing from the heat - Once the pasta is cooked, drain and add it to the ragu, stirring to combine and fully coat the pasta with the sauce
- Allow to cool and refrigerate until it is ready to serve
- Prepare the tomatoes (you can use whatever tomatoes you can find but it's nice to have a mix of heirloom and cherry tomatoes if possible)
- Cut the cherry tomatoes in half and cut up the heirloom into chunks. Add the tomatoes to the pasta along with the chopped basil and rocket leaves
- Add the olive oil & balsamic vinegar, stirring to combine
- Top with freshly chopped basil and serve
- And there you have it - your "just something I threw together" salad 😜
