Loaded Sweet Potato Fries

Serves 2

Loaded Fries Ingredients: 

  • 1 x Fiid Smoky Mexican Black Bean Chilli
  • 1 x Sweet Potato
  • 1 x Tablespoon Olive Oil
  • 1 x Teaspoon Smoked Paprika
  • 1 x Tablespoon Nutritional Yeast
  • Handful fresh Coriander, chopped
  • Salt & Pepper

Avocado Smash Ingredients:

  • 1 x Ripe Avocado
  • 1 x Lime
  • Salt & Pepper

Method:

  1. Preheat Oven 200C
  2. Peel and cut your sweet potato into wedges, lay out on a baking tray and drizzle with olive oil, season with salt and pepper and smoked paprika.
  3. Pop into the oven for 25 – 35 min turning once or twice throughout.
  4. In a bowl add your avocado, juice of one lime and salt and pepper. Mash roughly with the back of a fork.
  5. Heat your Fiid Smoky Mexican Black Bean Chilli according to the instructions on the back of pack.
  6. Once your sweet potato is cooked, transfer to a plate and sprinkle with nutritional yeast.
  7. Top it off with Fiid Smoky Mexican Black Bean Chilli and your avocado smash and a Handful fresh chopped coriander.
